Responsibilities:



  • Instruct the students within different settings and ensure that the curriculum is taught according to the established standards

  • Motivate and guide student and apprentices in a pedagogical manner in their development of skills, knowledge and attitude required for the industry and their future career

  • Collaborate closely with the team and assure a high quality of food production, application of impeccable hygiene and respect of the methods of work and service according to the defined norms

  • Be pro-actively engaged, respect colleagues, be helpful and support other kitchen jobs when time allows

  • Develop menus, recipes, daily specials, ethnic and sushi specialties

  • Prepare ingredients list for purchase orders and place orders according to the requirement of kitchen management, including inventory and ordering of materials

  • Ensure compliance with applicable local health codes and regulations and be a role model when it comes to hygiene & cleaning processes in the kitchen

  • Check the cleanliness of the kitchen according to the Weekly Cleaning planning and ensure the HACCP standards are respected

  • Always ensure that the quality of food reaches the School' standards

  • Host different practical and theoretical workshops and efficiently supervise the students and monitor their performance

  • Manage the daily production, manage the quantities and respect the production according to the meal plan

  • Contributes towards the production of high quality food in the various food production areas while teaching the best in-class practices of the industry

  • Utilize a variety of teaching techniques, methods and materials which assist students in attaining the performance objectives of the course

  • Participate in the development of the Culinary Curriculum, maintain proper records of all materials and ensure that the conduct of students is according to the GIHE standard

  • Develop and share best practices in order to maintain the high standards of the lessons

  • Have good interaction with the production kitchen on the Bulle Campus and create a good relationship with them


Profile and experiences:



  • CFC (cook) or equivalent

  • At least 5 years experience in a Hotel or Restaurant operation whereby a minimum of 2 years in a managerial position in reputable institutions

  • Experience in an international environment

  • Proven experience in sushi making

  • Pedagogic and teaching certificates are a plus

  • Regular participation in pedagogic workshops

  • Constantly seeking to improve

  • Fluent in French and English
